Meal Prep Sautéed Variety of Veggies

Sautéing a variety of veggies at the beginning of the week is a great way to lazily “meal prep”. Add to fried rice, fill an omelet, eat plain as a side (good all week), or freeze for homemade instant “frozen vegetables”!
Heat some olive oil in a pan over medium heat. Add onions first and cook until they begin to slightly caramelize. Next, add the carrots and continue cooking. Then, add the brussels sprouts, green beans, and bell pepper. Finally, add the red cabbage. Cook, stirring occasionally, seasoning lightly with each addition of vegetables. Toward the end of cooking, add a little white wine (or chicken/vegetable stock) to help the veggies steam and cook completely through.
