Cheddar Chive Biscuits

Add the flour, baking powder, kosher salt, garlic powder, and chives to the bowl of a stand mixer fitted with a paddle attachment. Mix in the cold butter on low until the pieces are around the size of a pea. Add in the cheddar, then drizzle the buttermilk with the mixer running on low until the dough comes together. Place the dough on a lightly floured surface. Form into an 8x8” square, then cut into 3 equal rectangles. Stack them, then press down and back into the square. Repeat one more time, then place it all in the freezer for at least 15 minutes. In the meantime, preheat the oven to 425° F. When it’s ready, cut the biscuit dough into 9 equal squares and place on a sheet tray lined with parchment paper. Brush each piece of dough with 1 tablespoon of buttermilk (from the main quantity) and top with flaky salt. Bake 15-17 minutes, or until golden brown.
